Mom’s Cucumber Salad

You know it’s summer time when you start thinking cucumber salad!  This recipe takes me back to many summer meals back in Michigan.  It’s a fave.  And super easy.

1 tablespoon sugar

2 tablespoons rice of cider vinegar (I use cidar)

1/8 tsp. salt

a dash of ground red pepper

1 clove garlic minced

1 medium cucumber

  • Skin and core the cucumber
  • Cut the cucumber in half lengthwise and slice
  • Mix all ingredients together except the cucumber until the sugar dissolves
  • Then mix in cucumber
  • Chill and serve

I like to double or quadruple this recipe and have yummy leftovers for another dinner or lunch.
